The chestnut mushroom is complex. Not just in taste, but also in its confusion. This mushroom, also known as Pholiota Adiposa, has been mistakenly referred to as the agaricus bisporus many times because of its shape and color. The agaricus bisporus is most regularly known as the button mushroom, baby bella, crimini, or portobello mushroom. However, it is important to mention that these mushrooms are in the same family as the Nameko mushroom. And more importantly, chestnut mushrooms taste differently than the common button mushroom, but we’ll get more into that below.  The chestnut mushroom growing kit is a favorite of those who like to watch unique mushrooms grow. This mushroom, although very tasty, is not commonly cultivated in the United States. Those who do cultivate it recognize its flavorful qualities and often have a deeper understanding or interested in edible mushrooms. Discover background information on the pholiota adiposa

The word “pholiota” means scaly in Latin, and “adiposa” comes from the name of lard or grease. The caps of these mushrooms have a scaly texture and the surface of the cap has a greasiness to it. The caps will feel slimy if wet.  In the wild the chestnut mushrooms primarily grow on beech trees, although they have also been found on oaks and poplars.  The caps of the mushrooms are yellow with brownish scales and there may be veil fragments present before they are ready to harvest. The stems are yellow which become a rust-brown color closer to the base. Often times the stems will join together where they meet the substrate. You will often find this happening with our chestnut mushroom growing kit.

The mushroom farmers at Mycoterra Farm in Deerfield, MA have a great write up on the chestnut mushroom that we think you’d enjoy. Here’s a peak at it:
“This mushroom has a unique make up, so after the cooking process it maintains a very particular texture, almost crunching even after the chitin walls have been weakened by being cooked. The mild earthy flavor has notes of a peppery finish, and the texture excites an average dish with variation and plays very well in creme sauces. It excels in miso and other brothy soups; or add it to a stir fry or substitute into your favorite sauce recipe. It can also be seared with garlic and oil or butter and added atop salad or in spring rolls.”
The website for Honest Cooking also has a tasty recipe for using chestnut mushrooms in risotto. The recipe is entitled Chestnut Mushrooms & Lemon Thyme Risotto. It is a fairly quick recipe to make and the flavorful experience is well worth the attempt. Check out this recipe now.

Healthful benefits from the chestnut mushroom

The website Healing Mushrooms cites some studies on the chestnut mushroom and its antitumor effects. According to the website, “Polysaccharides extracted from the mycelial culture of P. adiposa and administered intraperitoneally into white mice at a dosage of 300 mg/kg inhibited the growth of Sarcoma 180 and Ehrlich solid cancers by 70% and 60%, respectively (Ohtsuka et al., 1973).” An additional study looked at these results further and Healing Mushrooms discusses those findings as well. According to the site:  “Mice which were injected with a million Sarcoma 180 cells, and then one day later injected with the alcohol-precipitated polysaccharides from a hot-water extract of the fat Pholiota (at a dose of 20 mg/kg body weight per day for 10 days) had an inhibition ratio of 27.3%, compared to the mice that didn’t get the mushroom extract (Chung et al., 1982).“ The author of the report suggests that these anti-tumor properties are connected to an enhanced immune system from the consumption of the constituents found in these unique mushrooms.
